Tasty Tuesday: Creamy Quinoa Salad

Update 9/17/13: I am ashamed to admit that I didn’t actually try making this recipe before I posted it. My Aunty Nik cooked it and I demanded the recipe. Granted it’s still delicious, there are definitely a few tweaks that need to be made. Also, I’ve talked to two readers who have made it multiple times and improvised with whatever ingredients they have available. All their new dishes sound awesome! So don’t be afraid to throw in that last bit of cucumber of the shrimp you have leftover in the fridge, this recipe is great for that. And check out below for the tried and tested recipe.

Tasty Tuesday: Maple Ginger Salmon

I’ve said it before and I’ll say it again, I DON’T LIKE FISH. I found one recipe that I loved because it made it taste like chicken (Sweet Teryaki Salmon) but every one I’ve tried since then is so salty … and the texture, yuck.

Tasty Tuesday: Acorn Squash and Carrot Soup

How do I name a soup to convey its deliciousness? The title of this post isn’t all that enticing but wowza this soup is amazing. It’s fresh, flavorful, and surprisingly filling. I was starving so I made a batch of this stuff and threw a couple of pieces of toast on my plate. I got so wrapped up in the soup that I forgot the toast! I ate two bowls and couldn’t have fit anything else in my belly. Plus, it’s really EASY.

I don’t make soup often but I never regret it. I made a big batch in half an hour. I probably could have eaten it all in one sitting but then I would have to roll myself to bed. So I froze half of it and now we have dinner for another night.
