Delectably Delicious Honey Mustard Dressing

Making your own dressing can become complicated very quickly. You start with a few ingredients and keep adding more until your tongue gets beyond confused. When it comes to dressing, the simpler the better.

I happen to LOVE honey mustard dressing. But it wasn’t long before I found out all the crappy ingredients in the processed stuff (so annoying!). Luckily, this is one of those simple dressings that is absolutely delicious and super easy to make. Plus, all the ingredients are really great to keep around for other recipes.

I make a big salad every week and keep it in the fridge. Each morning a serving goes in tupperware with this on top. It makes for a really easy greens fix for lunch or just a snack. So try it out. SO YUMMY.

Tasty Thursday: Moroccan Stew

This past several days have been unbelievably hot in San Diego. Every year winter comes and goes and I forget the feeling of sweat-soaked clothing on my skin. Not terribly comfortable for the woman who regularly wears black polyester pants (we’re getting close to laundry day here).

However! I’ve had the veggies for this recipe almost a week now. They were on the verge of going bad. So we sat in our sweltering apartment and ate hot stew. Oddly enough, it made us feel cooler! I have heard that when you eat hot food, it heats your body temperature and there’s not such a huge difference between you and the air. Hmmmm…

Regardless, I would have eaten this stew even if it made me sweat like a Scotsman at a charity fundraiser. In other words: it’s delicious. Chunky and thick and SO tasty.

I’m trying to teach myself a few recipes to prep on Sunday nights and crockpot cook it on Monday while I’m at work. It makes our late track riding clinic much easier to handle if dinner is ready when we get home. You could do it in a pot though. Just try it, however you decide to cook it.

Tasty Recipe: Pineapple Shrimp Skewers

This last weekend, my friend in our apartment complex (lovingly dubbed “the courtyard”) organized a cookout/ movie night. She acquired a projector, organized the potluck, and set up all the fixin’s. We grilled and ate our weight in meat, pasta salad, and veggies, then watched a movie outside in the courtyard.

The courtyard houses some pretty awesome people and we had a great laugh. The best part was being close enough to use our own bathroom, grab a glass of water, and not have to worry about the journey home.

Anyway, I decided to try the shrimp skewers Bonnie perfected for us a few weeks ago in Maine. I tweaked Bonnie’s recipe a bit because I love grilled pineapple. The marinade was amazing and the overall product was delicious. It’s really simple and assembling the skewers can be a social activity. This is a great one. Enjoy 🙂

Tasty Friday: Gluten Free, Dairy Free, Vegetarian Lasagna

While in Maine last week, I was so stoked to find out that Mike’s mom, Bonnie, has turned to the Nutritarian side! I try not to label the diet things because everyone has their own way and “certain knowledge,” but the word nutritarian covers a lot of basis. It basically means that we will eat anything that gives our body the largest amount of nutrients. This means that a person has to figure out what they don’t tolerate and then what makes them feel incredible.

Anyway, Bonnie is an amazing cook and I was so excited by everything she made for us. Most of it followed my rules so I could afford the random blueberry pie slice and blueberry muffin here or there without feeling like crap.

So on to the recipe! Bonnie adapted this recipe from the amazing post by Dance While You Cook: Kick Ass Lasagna.

Tasty Tuesday: Sweet Ricotta Bruschetta

My parents AND siblings came down to see our apartment this weekend. Over the span of Friday and Saturday I had a crazy night with my parents, an awesome last bootcamp workout with new/old friends, and amazing Mexican food/Hot Dogs/dessert eat session with my siblings and Mike.

It so odd to be interacting with them as adults now. With my parents, its like I’ve returned with valid opinions and the ability to handle responsibility. WHAT?! Weird. With my siblings there were always arguments. Put together 4 boisterous, confident, outgoing, smart kids and there’s no way to avoid head butting. However! As we enter adulthood together, we’ve learned each other’s quirks and are actually starting to get along! Siblings as friends, who knew??

Anyway, my parents came over for appetizers before we went out for dinner. I have learned from many mistakes with this, not to shoot too high when it comes to apps. I settled on 1 reach plate (falafel which was a total disaster), rice crackers with this amazing local sauce called Bitchin’ sauce (too easy to mess up), and this Ricotta Bruschetta (great success!). I got the original recipe from Martha Stewart.

Disclaimer: It’s not entirely to my “no cow dairy” rule since each piece has ricotta but it didn’t actually irritate my stomach at all. VICTORY!

This recipe is unbelievably simple. It’s tasty and light and delicious. It’s probably best at breakfast time or when balanced with a different, more savory dinner app. Enjoy!

Tasty Tuesday: Creamy Quinoa Salad

Update 9/17/13: I am ashamed to admit that I didn’t actually try making this recipe before I posted it. My Aunty Nik cooked it and I demanded the recipe. Granted it’s still delicious, there are definitely a few tweaks that need to be made. Also, I’ve talked to two readers who have made it multiple times and improvised with whatever ingredients they have available. All their new dishes sound awesome! So don’t be afraid to throw in that last bit of cucumber of the shrimp you have leftover in the fridge, this recipe is great for that. And check out below for the tried and tested recipe.

My last Tasty Tuesday was a recipe cooked by my fabulous aunt. Well here is another one! It must be said that credit for that Summer-time Cucumber Recipe goes to another great chef, gorgeous Stella, and this one goes to a darling lady I’ve known since she was tiny, Jessica.

Tasty Tuesday: Summer-time Savory Cucumbers

My aunt is an incredible cook. While my mom is amazing at delicious, simple, relatively quick dishes, my aunt specializes in going all out for large groups of people. She loves to cook and we are all happy to indulge her.

While we were on our staycation at the beach house, she made some dishes that beg to be shared. This first one is a perfect summer appetizer. Refreshing, tasty, and really healthy.
