As you all know from my most recent posts, Mike and I just moved to San Diego from Peoria. I was going through my photos and realized how little of it I’ve actually shared with you guys! We have done so many awesome things this last couple weeks …

I am a very introspective person. For a long as I can remember, I have looked upon admirable people and analyzed why others respect and love them. I do the same for annoying, disrespected people. It may sound shallow but this process of defining my own character has made me confident that the person I am is the best kind of person I can be.
I have a distinct memory of walking to lunch in 7th grade. I was wearing my signature pink tank top with braids in my hair and I was walking with my friends. I wasn’t part of the popular crowd. They were all nice enough to me but I didn’t love their emphasis on disobeying your parents and “hooking up” with random other people in the group, so I tended to stay away.
Apparently chili is a summer tradition? I had no idea until this May when the bloggers and pinners I follow started blowing up with chili recipes. Chili and burgers is the America way, I guess.
Anyway! I’ve been trying to perfect my 3 bean chili for a few months now. It’s vegan, full of protein and healthy fats, and SO delicious. Also, it’s VERY easy to make. To prove my point, and because I was having a long day, Mike made this dish! He’s actually great when he has a recipe to follow and this was so simple. If he’s willing, he may just be making it more often 🙂
Morning Ya’ll! In doing these 6am workouts, I’m realizing how energized I feel afterwards. My mind is still a bit sluggish but my body is raring to go! On that note, I’m not going to say much today except that this workout is AWESOME. It was one of those where I was sweating and red even 10 minutes after I got out of the shower. This week has been completely and utterly exhausting. I forgot how draining it is to adjust to a new schedule, especially when that schedule involves 6am workouts … but I’m getting the hang of it and next week I WILL have more energy! Haha.
So last night, my mom invited me to a cooking class! My dad is sick so I took his place. It was us and two other couples and it took place at a gorgeous winery in Rancho Bernardo, CA. We cooked three dishes and drank as much wine as we could stomach in the 3 hours we were there. YUM. My favorite dish by far was the Mexican Poached Eggs. I am trying to go full vegan (at least during the week) but when the dish is as tasty as this, it’s definitely worth eating. Continue reading →
